Improve your understanding and reclaim the lost flavours of cooking with different types of poultry - ducks, spent hens and roosters.

In this workshop we’ll show you how to break down a duck and be taken through recipes for each of the cuts - including rendering fat, making stock, confit and curing breasts. You’ll learn about different types of chicken, specifically cooking with spent hens and roosters - what they’re good for and how to turn them into delicious, nutritious meals.

Recipes will be provided at the end of the workshop. Only a basic understanding of cooking and simple tools at home are needed.

A delicious lunch is included.
